    1 English Cucumber - cut in half
    1 Slice red onion
    1 TBSP virgin olive oil
    1 TBSP wine vinegar
    Salt & Pepper to taste - if desired.


Cut large English cucumber in half
Cut this piece down centre
Cut into thin slices
Cut one large slice of red onion - dice
Add 1 TBSP Virgin Olive Oil
Add 1 TBSP wine vinegar
Add salt & pepper to taste
Mix together - then place in fridge to mariniate for 2-4 hours
Makes 2 servings
