Ingredients

1 tsp olive oil
1 large onion, roughly chopped (200g)
2 yellow bell peppers, cut into bite-size chunks (300g)
2 courgettes (zucchini), cut into bite-size chunks (280g)
pack of baby button mushrooms, cleaned and left whole (160g)
2 cans chopped tomatoes
1 can red kidney beans, drained and rinsed
1 can black-eyed beans, drained and rinsed
100g tomato puree
1 tbsp cumin powder
1/2 tsp black pepper
1/2 tsp chilli powder (or to taste)
Directions
Heat oil in a large saucepan and fry chopped onions for a couple of minutes.
Add peppers and courgettes, stir, and continue to cook on a medium heat for 5 minutes.
Add mushrooms and cook for a further 5 minutes.
Add canned tomatoes, beans, tomato puree and spices, mix well, and cook uncovered for fifteen minutes or so.
Adjust seasoning and spice to taste.
Serve with rice, tacos or pitta bread.
