    1 cup whole wheat flour
    1/2 cup white flour
    3 tsp. baking powder
    1/2 tsp. salt
    1 Tbs. sugar
    1 extra large egg
    2 Tbs. canola oil
    1 1/2 cups low fat buttermilk
    1/2 cup chopped pecans
    1 cup blueberries (fresh or frozen)


Mix dry ingredients together. Add egg, oil, and buttermilk and whisk together. Add nonfat milk slowly to desired consistency. Fold in pecans. Drop pancakes onto hot skillet sprayed with cooking spray (or small amount of oil) and drop a handful of blueberries on top. When top starts to bubble, flip and cook until edges are brown and middle is done.

Serve with warm pure maple syrup.
