Ingredients

    2 large whole grain tortillas
    3 whole eggs
    2 egg whites
    1/4 cup 2% shredded cheese
    garlic salt and pepper to taste
    1/2 cup chopped tomatoes
    1 scallion, sliced

Directions

Whip eggs together with garlic salt and pepper.
Cook 1/2 of egg mixture in large skillet until set, flip over.
Top with 1/2 of cheese, tomatoes and scallions.
Heat until cheese is melted.
Slide egg omlette onto tortilla, roll into burrito
Repeat with remaining egg, cheese and tomatoes
