Number of Servings: 6


    2 cups Chickpeas, rinsed and drained
    2 cups Black Beans, rinsed and drained
    2 cups Artichoke Hearts, cut into quarters
    1 cup Celery, diced
    1 med. Red Onion, diced

    1/3 cup Red Wine Vinegar
    1/4 cup Olive Oil
    3 Garlic Cloves, minced
    1/2 tsp Dried Mustard
    1/4 tsp Ground Pepper
    1/4 cup Parsley, chopped


In a large bowl, combine all of the ingredients. Toss well to combine. Cover and chill for at least 30 minutes before serving to allow flavours to blend. Toss the salad again before serving. Makes 6 servings.
