Number of Servings: 2


    * *1/4 C. Arborio rice, 1 serving
    * Chicken Broth, 1.5 cup (8 fl oz)
    * Parsley, dried, 1 tsp
    * Saffron, 1 tsp
    * Olive Oil, 1 tbsp
    * Shallots, 1 tbsp chopped

    Pepper, black, 1 dash


In a medium sauce pan add the tablespoon of Olive oil and the diced shallot and minced garlic cloves, simmer until tender. Next add 1/4 C. of the arborio rice and cover it with 1/2 C. chicken stock, simmer and constantly stir until fluid has been absorbed, add another 1/2 C. chicken stock and simmer until absorbed, and add yet one more 1/2 C. of chicken stock and simmer until absorbed at this point add a pinch of saffron, and a dash of pepper,and some dried parsley stir well and serve!
