Introduction

A nice compliment to chicken or fish. A nice compliment to chicken or fish.
Number of Servings: 6

Ingredients

    Beans, black, 2 cup or one can, rinsed
    Red Ripe Tomatoes, 1 medium whole , chopped
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Red Onion, .5 cup chopped
    *Dole Mandarin Oranges, 1 cup, rinsed
    *Ground Cumin, .25 tsp
    Cilantro, dried, 2 tsp
    Lime Juice, 2 TBSP
    *Canola Oil, 1TBSP
    Salt to taste (1/2 tsp.)
    Pepper, black, .5 tsp
    (optional) 1 small jalapeno pepper finely diced (wear gloves)

Directions

Combine the beans, tomato, bell pepper, onion, jalapeno, and mandarin oranges (can substitute mango) in a medium bowl. Whisk together spices, lime juice and oil. Mix together and stir. Let stand for flavors to absorb.

Makes 6 1/2 cup servings
