Ingredients

3 large baby zucchini, spiralized into noodles (or cut to thin strips with a vegetable peeler)
1 red or yellow bell pepper
2 medium fresh tomatoes
1/4 C sundried tomatoes
1 Tbsp extra virgin olive oil
1/4 tsp sea salt
5-10 fresh basil leaves (depending on size and taste preference)
Thyme, oregano, or Italian seasonings to taste
Directions
Spiralize or cut the zucchini into thin strips with a vegetable peeler. (You can peel the skin first if you prefer. I use organic zucchini so I leave it on.)
Roughly chop the tomatoes (fresh and sundried), basil and bell pepper and put in a food processor. Add remaining ingredients to processor and pulse till desired consistency. Some may prefer a more chunky sauce, others a smoother sauce. Adjust seasonings as desired.
Spoon sauce over zucchini noodles and serve. Makes 3-4 servings.
If making a single serving, I usually prep only the zucchini that I need and store the sauce in the fridge. Then I will prep more zucchini on an as-needed basis.
