    1.25 LB of Jennie-O Lean Ground Turkey
    1 Packet of Enchilada Sauce Mix (McCormick)
    8oz Hunts Tomato Sauce
    .25 cup Taco Seasoning
    27 Don Marco Corn Tortilla
    2.25 cup Mexican Blend Cheese
    6.75 Cups White Rice
    2.25 cups Yellow Corn


Prepare Turkey with Taco Seasoning.
Prepare Sauce as described on the Enchilada Sauce Packet.
Microwave Shells for 30 seconds with a wet paper towel over top of them to soften them up.
Dip Shells in enchilada sauce then place in pan and add meat and cheese.
Roll up enchilada and place in pan that has been covered with the sauce.
Place any remaining cheese on top of the enchiladas and bake for 20-30 minutes.
will make 27 enchiladas - 3 per serving.
