Introduction

This is best served with whole wheat fettucini. Goes well with chicken or salmon. Or simply serve as is for a meatless meal that is quite filling. Ingredients

    3 Tbsp butter
    2 Tbsp dry basil
    2 Tbsp dry parsley
    8 oz light cream cheese, softened
    1/4 cup parmesan cheese
    2 Tbsp olive oil
    1/4 tsp garlic powder
    1/8 tsp black pepper
    1/4 tsp salt
    2/3 cup boiling water (use the water the pasta boils in)

    * 1 lb pasta of choice (not calculated)

Directions

While the pasta is cooking prepare the sauce. In a big bowl use a fork or a whisk to mash everything except water together. Now add the boiling water. I dip it out of the boiling pasta with a measuring cup, but you could measure it, and boil it separately if you preferred. Pour the boiling water in slowly and mix it all up until the sauce is the consistency of thick cream. Pour the sauce over the cooked pasta and toss it all together until it is well mixed.

    Incredible!
    I thought this pasta dish was delicious! The sauce by itself tasted a little salty (didn't add much salt), so I didn't pour all of it on the pasta. I ended up putting the exact right amount, it covered all the pasta and tasted great. So if there's too much flavor, just put a little less on the pasta - 8/19/09

    Tried this recipe tonight, and it turned out pretty well. The basil flavor was a bit strong for my taste, so I'd probably cut back on that next time. Adding a bit more cream cheese to the sauce helped balance that out. Good with some cubed grilled chicken thrown into the mix. - 8/16/09
