    4 cup Flour
    1.5 cup Sugar
    1 pkg. (3.4 oz) Instant Pudding Mix (LEMON)
    1.5 tsp. Baking Soda
    1 tsp. Baking Powder
    1 tsp. Salt
    4 Eggs
    1.25 cup Skim Milk
    1 cup Vegetable Oil
    3 TBSP. Lemon Juice
    1 tsp. Lemon Extract
    2 cup Zucchini, shredded
    1/4 cup poppy seeds
    2 tsp. grated lemon peel


Combine: flour, sugar, pudding mix, baking soda, baking powder and salt. Mix well and set aside.

In another bowl whisk together: eggs, milk, vegetable oil lemon juice and lemon extract.

Combine all and stir until blended.

Fold in: zucchini, poppy seeds and grated lemon peel.

Pour into 3 greased loaf pans (8x4) and bake at 350 for 50-55 minutes. Each pan yields 12 slices for a total of 36 servings.

  • I would definitely make this recipe again and maybe even try it in muffin form and see how that works. I used 1/2 c. oil & the other 1/2 c. applesauce. It still tasted wonderful & also that brought the fat and the calorie count down. I really like the refreshing lemony flavor of it. - 8/8/10
