    16oz ricotta cheese, skim/light
    2 c 2% mozzarella cheese, skim (reserve 1/2 c)
    1 large egg
    10oz frozen spinach, thawed
    1/4 c. parmesan
    salt & pepper

    large jumbo shells, prepared and cooled


Combine all ingredients except for the shells. Mix until fully combined. Stuff evenly into prepared shells. Top with sauce of choice.

Bake at 350 for 25 minutes, or until bubbly.
