Chicken and Mushroom Penne Pasta with fire roasted tomatoes Chicken and Mushroom Penne Pasta with fire roasted tomatoes
Number of Servings: 4


    Penne Rigate - 2 cups
    Can of Fire Roasted diced tomatoes
    1 cup of sliced mushrooms
    1 squash (any kind) cut into thin slices.
    One chicken breast cut into bite sized pieces
    2 tbsp extra virgin olive oil
    parmasan cheese


Start water boiling for pasta at the same time you put your chicken in your toaster oven or george foreman grill.

when the pasta is done, drain the water leaving about 1/4 cup left in the pot. Add the fire roasted diced tomatoes, mushrooms and squash -- add mrs. dash.

When chicken is done cut into bite sized pieces and add to the pasta mixture - stir and let simmer for a few minutes and then serve.

Serves 4.
