Ingredients

    9 oz (3 servings) TJ's cooked shrimp, medium, tail off (about 18 shrimp / serving)
    1 small onion, cut into chunky wedges
    2 tablespoons red curry paste
    2 c coconut milk, light
    1 16oz pkg 365 Organic Thai Stir-Fry Vegetables
    1 tablespoon freshly grated ginger
    1 teaspoon dried [or a handful of fresh] basil

Directions

Spray a medium skillet with olive oil and heat to medium/low heat.

Add the shrimp until heated through

Add the coconut milk and red curry paste; heat until bubbly and the curry paste is dissolved.

Reduce the heat, cover, and let simmer on low heat for about 10 minutes.

Add the ginger root, vegetables, onion, and basil and stir til heated through, you want the veggies to be crispy, not soggy.

(Best served w jasmine rice)
