    1/3 c unsalted natural almond butter
    2 tbsp rice vinegar
    1 1/2 tbsp low-sodium soy sauce
    1 tbsp freshly minced ginger
    1 1/2 tsp chile-garlic sauce
    8 oz soba noodles
    1 1/2 c snap peas
    1 1/2 c grated carrots
    1 1/2 c thinly sliced green onion, divided
    1/3 c fresh cilantro (or mint) chopped,
    1/4 c sliced almonds, toasted
    1/2 tsp sea salt


Combine almond butter, 1 tbsp water, vinegar, soy sauce, ginger, and chili-garlic sauce in a large serving bowl. Whisk to blend.

Bring large pot of water to boil; add soba noodles and peas and cook for 8 minutes. Stir in carrots adn cook for 2 minutes more, or until soba noodles are tender.

Drain and add spaghetti and veggies to bowl w almond mixture. Toss to blend. Stir in 1/4 c green onion, cilantro (or mint), almonds and salt.

Garnish w remaining green onion.
