Number of Servings: 4

Ingredients

    1 cup flour
    3 eggs
    1 tsp salt
    1.5 cup milk
    3 tbsp butter
    7 oz salmon, pink
    6 tbsp mayonnaise
    1 tbsp chives, fine chop
    salt pepper to taste
    6 oz cream cheese
    2 tbsp mayonnaise
    3 slices, bacon

Directions

1. to make crepes: mix flour, dash of salt, milk, egg whites,and butter. Beat until smooth, let batter rest.
2. heat a small skillet, brush with alittle oil, remove from heat and pour a little batter in middle and twirl wit h your wrist to spread. Once spread evenly, allow to cook untill edges are golden brown, then fli pover and cook another minute. Continue until batter is exhausted.
3.once crepes are cooled trim to about 6 in.
4. to make salmon layer: mash salmon, 4 tbsp mayo, and chive in small bowl. Mash until smooth, no lumps. season.
5. to make cream cheese layer: leave in room temp. combine with remaining may0and season.
6. You can make crepe rolls with both spreads or layer spreads between crepes and cut into wedges.
