This recipe can really be made with any number of vegetables. Additionally, the sodium content in the nutrition info is incorrect. You can soak fresh chickpeas overnight or use "No Salt Added" garbanzo beans and have minimal to no sodium content if that is of concern. This recipe can really be made with any number of vegetables. Ingredients

    2 cups garbanzo beans (=1 cup soaked or 1 15oz can)
    1 green bell pepper, finely diced
    1 red bell pepper, finely diced
    4-5 scallions/green onions, finely chopped
    1/4 red onion, finely diced
    1 large fresh tomato, finely chopped
    3-4 oz. feta cheese, crumbled
    juice of 1 lemon
    2 Tblsp olive oil
    1/8 tsp black pepper
    chopped parsley or oregano to taste

Directions

Mix all ingredients together & refrigerate until serving. Enjoy!
