    1.5 c mozarella
    28 oz diced tomatoes
    5 c chopped zucchini
    1/2 tsp dried oregano
    1/2 tsp dried basil
    1/2 tsp salt
    1 cup cooked lentils
    1/2 cup brown rice


Preheat oven to 350.

In large casserole, combine 1/2c of cheese w/the tomatoes, zuke, oregano, basil, salt, lentils, and rice. Stir together.

Top with remaining cheese and bake uncovered 40-50 minutes (until the rice is done).
