    2 cups shredded zucchini (do not peel)
    1 cup whole wheat flour
    1 cup white flour
    1/2 tsp baking powder
    2 tsp baking soda
    3 tsp cinnamon
    1/2 tsp salt
    2 large eggs
    1 cup Splenda brown sugar blend
    1/2 cup unsweetened applesauce
    2 tsp vanilla extract


Preheat oven to 350 degrees. Spray 2 8" loaf pans with non stick cooking spray. In medium bowl combine flours, baking soda, baking powder, cinnamon, and salt. Set aside. In separate bowl beat eggs, sugar, applesauce, and vanilla. Fold in zucchini. Add dry ingredients and stir to combine. Pour evenly into 2 loaf pans. Bake at 350 degrees for 45 - 50 minutes. Slice each loaf into 8 slices and enjoy!
