Introduction

When I had this at Olive Garden, it was lighter and fresher than their previous version which had been dark and redolent of tomato paste. Ingredients

    2 medium Tomatoes, red, ripe, raw, year round average
    1.5 tbsp Olive Oil
    3 fresh leaves Basil
    3.5 oz Capellini Pasta, cooked
    1 clove Garlic
    1 tsp Salt (for pasta water)
    Salt and Pepper to Taste

Directions

Cook pasta. While it's cooking, chop tomatoes, basil, and garlic and add olive oil. Toss well and add salt and pepper to taste. Drain pasta. Toss with tomato mixture and serve immediately.

Serves 1 as an entree, 2 as a side dish.
