These are so good, and really light textured! These are so good, and really light textured!
Number of Servings: 30


    1/2 c. Granulated Sugar
    1/4 c. Butter, unsalted
    2 small eggs

    1 c. Milk, nonfat
    2 c. King Arthur white whole wheat flour
    1/2 tsp. salt
    1 tsp. Baking Powder
    1 tsp. Cinnamon
    1/2 tsp. Allspice
    1/2 tsp. Nutmeg
    1 1/5 c. Apples, fresh, quartered or chopped
    1/4 c. Brown Sugar
    1 tsp. Cinnamon, ground


Cream together butter and sugar. Add egg and beat well. Stir in milk. In another bowl, combine flour, salt, baking powder, and spices. Add butter mixture to flour mixture and blend until just moistened.( Batter will be lumpy.) Add apples and blend carefully. Fill well greased mini muffins tins. Bake at 400 Degrees for 10 minutes or unti ltoothpick inserted in center comes out clean. Sprinkle with sugar cinnamon blend.
