    1 pound green beans, trimmed and snapped in half
    1 can garbanzo beans, drained and rinsed
    1/2 cup red onions, thinly sliced
    3 tbsp white wine vinegar
    1 tbsp olive oil
    2 tsp lemon peel
    1/2 cup cilantro, chopped
    salt and pepper (if desired)


Bring a large pot of water to a boil. Cook green beans until crisp-tender; about 2-3 minutes. Drain, place in an ice water bath, drain again.

In a large bowl, whisk together vinegar, olive oil, and lemon peel. Add green beans, garbanzo beans, onion, and cilantro. Toss to coat. Season with salt and pepper, if desired.

Makes 4 servings.
