Introduction
I found a recipe, similiar to this one, on the back of the cereal box. Ingredients

Filling:
1 cup chopped Apricots
3/4 cup Red River Cereal
1-1/2 cups hot water
1/2 cup packed dark brown sugar
1 tsp lemon juice
Batter:
1-1/2 cups Oat bran
3/4 cup Whole Wheat pastry Flour
1-1/4 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup Honey
1 cup (8 oz.) vanilla flavored nonfat yogurt
1/2 cup organic coconut oil - melted down
1/2 cup Unsweetened Applesauce
Directions
Filling:
1. COMBINE all ingredients in saucepan. Simmer 5 minutes.
Set aside to cool.
Batter:
2. COMBINE first 4 dry ingredient in large mixing bowl. Beat
remaining ingredients together to blend. Add with Apricot mixture to dry ingredients. Mix well. Spoon 1/2 full of batter into 36 greased muffin cups.
3. BAKE at 375°F (190°C) for 20 to 25 minutes, or until top springs back when lightly touched.
MAKES 36 muffins.
