Ingredients

    1/4 large pita pocket
    1 cup egg beaters or other egg substitute
    1 slice imported ham
    1/2 cup asparagus, sliced into 1/2-1" lengths
    1/4 cup diced red pepper
    1/3 cup shredded colby or monterey jack cheese
    1/8 cup diced green onion

Directions

Blanch asparagus and red pepper in water for 1 minute. Spray a skillet with cooking oil. Add the green onion. Saute for 1 minute then add the rest of the vegetables and ham. Add the spices to the beaten egg mixture. Pour the egg mixture over the vegetables and cook on medium heat for about 2 minutes until eggs start to cook. Add the cheese and continue cooking and turning until finished. Add scramble to 1/4 pita pocket. Tuck one edge around the egg mixture and wrap the other edge around the outside. (like a canolli)
