    1 butternut squash cut in half
    .5 c uncooked quinoa
    2 oz feta cheese
    .5 c kidney beans
    1 TBS olive oil
    2 TBS walnuts


1. Roast the butternut squash face down in pan with water in it at 400 degrees
2. Cook quinoa in water and drain
3. mix the quinoa, feta cheese and kidney beans.
4. Once butternut squash is done take out fill with mixture. Put 1 TBS of walnuts over each mixture. Then and drizzle 1 TBS over the top of mixture.
