    .25 t. olive oil
    1 c. chopped asparagus
    .5 to 1 c. chopped onion
    4 large eggs
    1 c. Eggo or substitute
    freshly ground pepper
    .25 c. asiago or parmesan cheese


Heat a pan and spray olive oil on the bottom and sides. Add asparagus and onion. Cook on low-medium heat, covered, until soft. Check on the vegetables and add 1 t. water if needed to prevent burning. Whisk eggs, Eggo and pepper. Add to pan and keep scraping the cooked mixture off the bottom with a rubber scraper. When the mixture is still moist, sprinkle the asiago over the top and finish cooking under the broiler. Be careful not to overcook or it will be dry.
