Introduction

Simple and delicious, this is a favorite at my house. This version is for 4 people, but could easily be increased to feed more! Simple and delicious, this is a favorite at my house. This version is for 4 people, but could easily be increased to feed more!

Ingredients

    4 boneless, skinless chicken breasts - trimmed of fat (about 16 ounces)
    1/2 cup sugar-free honey
    1/2 cup orange juice, no pulp
    1 tbsp. lemon juice

Directions

1. In small bowl mix honey, orange juice, and lemon juice until honey is dissolved.
2. Place chicken in small glass baking dish and pour honey mixture over top.
3. Bake (covered with tin foil) at 375 degrees F, for 30 min.
4. Uncover, flip chicken, and bake uncovered another 25 minutes or until chicken is cooked through.

I usually serve with rice (really good if you stir some of the extra liquid into it!) and carrots or corn, side salad.
