Ingredients

    1 pkg. (10 oz) frozen chopped spinach
    3/4 c. shredded fat free cheddar
    3/4 c. egg substitute
    1/4 c. finely diced green bell pepper
    1/4 c. finely diced onion
    3 drops hot pepper sauce

Directions

Heat oven to 350 F. Spray 12 c. muffin pan with cooking spray. Place spinach in microwave for 2.5 min. Drain excess liquid. In large bowl, combine spinach, cheese, egg, bell pepper, onion and pepper sauce. Mix well. Divide evenly among muffin cups. Bake at 350 F for 20 min.
