Ingredients

    1 c corn kernals
    1/2 c red onion, chopped
    1/2 c black beans
    1/4 c cilantro (or parsley)
    1/2 jalapeno, seeded and chopped
    1 garlic clove
    1/2 tsp cumin
    salt and pepper to taste
    2 tbsp red wine vinegar

    ** optional: 1 1/2 c grape tomatoes

Directions

Chop, mix and refrigerate for an hour before serving
