    Egg, fresh, 1 large
    Ricotta Cheese, part skim milk, .2 cup
    Eggplant, fresh, .5 cup, cubes
    Olive Oil, 1 1tsp


Peel and dice eggplant. Soften in oil on moderate heat. Scramble egg into a bowl with ricotta. Add to pan. Cook to your liking.

I add my corn tomato salsa with the eggplant to the pan too at times.
