Introduction

Ingredients

    28 oz can imported Italian style canned, peeled tomato
    1/2 c vodka
    1/2 c romano cheese
    1/4 c extra virgin olive oil
    3 tbsp minced onion
    2 garlic cloves, peeled and minced
    6 leaves fresh basil, torn
    pinch dried oregano
    salt and pepper to taste

Directions

Heat olive oil over medium heat. Saute onion until translucent; add garlice and saute until just softened. Stir in tomatoes, incl juice, vodka and cheese. Reduce heat to very low simmer and cook for about 1 hour or until flavors combine and sauce is slightly thickened. Stir in basil, oregano and pepper and cook for additional minute.
Makes approx 4 cups.
