    Egg substitute, liquid (Egg Beaters), 0.75 cup
    *1 small red potato, 0.5 , sliced thin
    Mushrooms, fresh, 0.25 cup, pieces or slices
    Spinach, frozen, 0.5 cup (remove)
    Sun Dried Tomatoes, 0.15 cup , sliced
    Margarine like spread, approximately 40% fat, 1 tsp
    *weight watchers cheddar cheese, 1 slice


melt butter over medium heat in skillet. add potatoes & salt and mix, then cover & cook for about 8 minutes, stirring occasionally, until cooked. Reduce heat to low. Add spinach, tomatoes & mushrooms & stir until spinach is wilted. Combine eggs, milk, marjoram & salt & add to vegetable mixture. Cover & cook until egg just set, then add cheese, cover & cook until cheese is melted.
