    2 tablespoons olive oil
    1 eggplant (cut into 1/2 inch cubes)
    2 cloves garlic, diced
    4 plum tomatoes, diced
    2 green olives, diced
    4 tablespoons red-wine vinegar (or more to taste)
    Salt to taste
    Black pepper to taste
    1/4 tsp. crushed red pepper (optional)
    9 oz. whole-wheat pasta

    recipe makes 9 - 1 cup servings


1. Put pot of water on to boil.
2. Heat oil in large non-stick skillet over medium heat. Add onions and garlic and cook until tender. Add eggplant and cook, stirring occasionally until just softened, about 10 minutes. Add tomatoes, olives, vinegar, salt, pepper, and crushed red pepper (if using) and cook, stirring until the tomatoes begin to break down, 5 minutes.
3. Meanwhile, cook pasta in boiling water until just tender, according to directions on package. Drain, place into serving dish and pour eggplant mixture over top.

Makes 9 - 1 cup servings. (approximately 3 weight watcher points per cup)
