Ingredients

    1lb ground beef
    1 8oz package shredded cheese
    2 cans enchalada sauce
    2 servings rice
    1 can Rotel
    10 soft taco shells

Directions

Brown the ground beef and drain any fat add 3oz of shredded cheese and one can of enchalada sauce and trun to low. Prepare 2 serving of white rice per package instructions when done stir in 1 can rotel. put all items in skillet and simmer for 5 min. Put a spoonfull of mixture in a soft taco shell and wrap like a burrito and place in a cake pan. Pour remaining can of enchalada sauce over enchaladas and top with the remaining cheese. Bake in a 350 degree oven for 15 min. Serves 10.
