Number of Servings: 10


    2 cups (8 oz) uncooked elbow macaroni
    1/4 cup unsalted butter
    1 12-oz can lowfat evaporated milk
    3 cups extra-sharp Cheddar cheese, grated (12 ounces)
    2 large eggs, slightly beaten
    1 tsp. dry mustard, dissolved in 1 tsp. water
    1/2 tsp salt, or to taste
    1/4 tsp cayenne pepper, or to taste


Cook macaroni according to package directions. Drain and return to the pot. Put the heat on low.

Cut the butter into small pieces and add to the macaroni, stirring until well blended.

Add evaporated milk, cheese, eggs, mustard, salt, and cayenne. Keeping the heat low, stir constantly until the sauce is smooth and steaming; if the sauce doesn't thicken after 5 minutes, increase the heat SLIGHTLY and continue to stir. Don't overheat, or the sauce will curdle.
