    2 14 oz cans of tomatoes
    3 medium carrots
    2 medium leeks
    5 stalks of celery
    2 red onions
    1 package of cabbage slaw
    1 Tabsp olive oil
    2 cloves garlic, finely sliced
    1 heaped Tbsp chopped fresh rosemary
    4 cups chicken stock
    3 good handfuls of fresh basil, torn
    can of garbanzo beans
    salt and freshly ground black pepper


Put the olive oil into a warmed thick-bottomed pan and cook the carrots, leeks, celery, onion, garlic and rosemary over medium heat until just tender (about 15 minutes.) These are chopped vegetables. Add the tomatoes and cook for 2 minutes. Add the stock and bring to the boil and simmer for 15 minutes. Add the cabbage slaw and cover the pan and simmer for 10 minutes, then add the basil and the chickpeas. Simmer for a further 5 minutes. Taste and season.

1 serving is 1 1/2 cups.

  • substitute the cabbage slaw for fresh baby spinach put in at the last moment, and instead of chick peas, use broad beans (frozen are fine) and/or tinned canellini beans. Also, a small handful of fine pasta threads bulks it out as a main meal. - 5/5/10
