Number of Servings: 6


    * Potato, raw, 2 large (3" to 4-1/4" dia.)
    * Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
    * Celery, raw, 0.2 cup, diced
    * Onions, raw, 1 medium (2-1/2" dia)
    * Tomatoes, red, ripe, raw, year round average, 1 medium whole (2-3/5" dia)
    * Green Peppers (bell peppers), 0.5 cup, chopped
    * Parsley, 10 sprigs
    * Salt, 1.5 tbsp
    * Water, tap, 1500 mL
    * Olive Oil, 3 tbsp


Cube in large pieces and boil the potatoes, the celery and the carrot together in about half the quantity of water needed for the recipe.

Sautee the rest of the veggies in the olive oil. When the potatoes and the carrot are done, remove them from the water and mash them with the rest of the water.

Add the sauteed vegetables and the potato and carrot cream to the water in the pot, bring to a boil, add salt to taste and then enjoy.

Makes 6 servings of ~250 ml, 6 soup cups.
