Ingredients

1 Acorn Squash
1 T. Whipped Butter
1 t. Curry Powder
1 t. Cinnamon
1 t. Black Pepper
1 dash Salt
Directions
Heat oven to 400 degrees. Prep squash by cutting in half and removing the stem, seeds, and string. In a 9x13 glass cake pan (or any shallow baking pan) set the cleaned squash MEAT DOWN. Cook for 35 minutes or until tender.
In a separate bowl mix together dry seasonings. (These can be adjusted based on your taste preferences.)
Turn squash over (so they look like bowls). Add half the butter to each "bowl" and sprinkle half the mix into each. Turn oven to hi Broil and let cook for 5 minutes or until just starting to brown.
Makes 2 servings aprox. 3/4 c. each.
