    Brown Rice

    2 boneless, skinless chicken breasts
    1 large onion, chopped
    2 cups eggplant, cubed
    1 cup summer squash, cubed
    2 cups fresh Asparagus


Cook 4 cups of brown rice. Set aside.

Coat a large pan or wok with non-stick spray. On med-high heat, saute chicken. When chicken is nearly done, add veggies. Cook till desired tenderness.

Serve over rice. Serves 5
