Ingredients

    2 lbs Chicken Breast, no skin
    2 Tbsp Olive Oil; divided
    2 garlic cloves; minced
    1 Onion; chopped
    3 tsp dried oregano, divided
    1 tsp Salt
    1 1/2 c Israeli (Pearl) Couscous
    1 1/2 c Low Sodium Chicken Broth
    1 cup Water
    1/2 lb (give or take) Fresh Green Beans; trimmed and halved
    1/2 Tomatoes, seeded and diced
    12 Marinated Artichoke Hearts roughly chopped
    12 Tbsp Feta Cheese Crumbles
    1/2 c. Kalamata Olives; pitted and halved
    2 Tbsp lemon juice

Directions

1. Heat 1 Tbsp oil in skillet and season chicken with 1/2 of oregano, salt, and additional dried minced garlic. Add to skillet and sear. Once one side is seared, removed and slice into pieces.

2. Once chicken is cooked, removed from pan. Add remaining oil. Cook garlic for 30 seconds then stir in onion and remaining season and cook for 4 minutes.

3. Stir in couscous and cook for 1 minute. Add chicken broth and water and bring to a boil, reduce heat to med-low and cook, covered, for 12 minutes or until water is absorbed. Add green beans for the last 5 minutes of cook time.

4. Add chicken, tomatoes, artichoke hearts, olives, and lemon juice and leave on heat for 5 minutes.

5. Top with Feta Cheese and serve.
