    1 cup cornmeal
    1 cup whole grain flour (I use white spelt flour)
    4 tsp. baking powder
    1/2 tsp. salt
    2 Tbl. brown sugar, packed
    1/2 cup instant nonfat dry milk powder
    2 beaten eggs
    1 cup 1% milk
    1/4 cup canola oil


Mix together cornmeal, flour, (if using spelt, sift first), baking powder, salt, brown sugar, and dry milk. Make a well and add: eggs, milk, and oil. Stir until smooth. Pour into greased 9x9" pan and bake for 25 minutes. Serve hot. This is a really good substitute for those with wheat allergies, if using spelt flour! We have added corn, jalepenos, and a little chili powder for another yummy alternative!
