Number of Servings: 3


    1 can chickpeas (1 2/3 cups cooked)
    1/4 tsp salt
    1/8 tsp cayenne pepper
    1/2 tsp parsley
    1/4 tsp garlic powder
    1 egg
    1/4 cup whole wheat flour
    1/2 Tbsp olive oil


Drain and rinse the chickpeas and place in a large bowl. Mash them up with a potato masher, leaving them a little chunky. Add the salt, cayenne, parsley, garlic and egg. Mix everything together until you have a sticky mess. Add the flour and mix again.

Spray a cookie sheet with spray. Pour oil onto the sheet and spread it out evenly. Using a rounded tablespoon for each falafel, shap the mixture into small patties, Arrange the patties on the cookie sheet. Flip each patty over so it is lightly coated with oil on each side. Bake at 450 for about 20 minutes. *Check after 15 minutes. Make sure they are nice and brown. Serve hot or use to fill pita bread.
