Number of Servings: 10


    1 head of cauliflower
    3 peeled medium potatoes
    1 large can of chicken or vegetable broth, non-fat
    1 green bell pepper
    1 red bell pepper
    4 peeled medium carrots
    Bag of fresh spinach
    1 T. minced garlic
    Salt & pepper to taste
    1 t. Cavender's Greek Seasoning
    1 pint of fat free half and half cream


Remove heads of cauliflower off of stems and cut into bite size pieces. In dutch oven, add broth, cauliflower, and enough water to vegetables. Cover, bring to a boil, and simmer. In the meantime, quarter peeled potatoes and put in food processor. Grind until they have a fine consistency. Add to soup mixture. With food processor, continue processing carrots and peppers, to as fine a consistency as desired. Add to soup. Add spices and torn spinach leaves. Simmer for 3-4 hours, stirring often. 15 minutes prior to desired serving time, add half and half. This soup can be thinned down as desired by adding water to accomodate personal taste or unexpected company! Makes 10 servings.
