Introduction
This is a wonderfully textured alternative to plain rice. The leftovers make a fantastic fried "rice" the next day with a little olive oil and lite soy sauce!! Ingredients

1 cup long grain brown rice
1/2 cup whole oats
1/2 cup pearled barley
1/2 cup quinoa (look at Whole Foods or a health food store)
5 cups water
1 tbsp light margarine spread
a few dashes salt, adjusted for taste
Directions
This works best in a rice cooker. Measure out ingredients as above, or by way of your rice cooker's instructions. If using a microwave, cut the recipe in half, and cook for 5 minutes on high, then 15 minutes on medium. (Make sure to put a towel underneath, it will probably spill out some rice water!)
