    Mushrooms, fresh, 2 oz, sliced
    1/2 Leek, sliced
    Butter, salted, 1 tbsp
    Olive Oil, 1 tbsp
    White Wine, 2 fl oz
    Scallops, raw, 8 oz
    Tarragon, ground, .1/8tsp
    Corn Starch, 2 tsp


cook mushrooms and leek in butter and olive oil for 5 min

stir in wine and tarragon, heat to boiling

Add scallops, reduce heat, cook uncovered till scallops turn white, 3-4 min

mix cornstarch with 2 Tbl cold water, stir into scallops

return to boil, cook 1 min, serve
