    2 tablespoon EVOO
    1 medium onion diced
    1 cup sliced mushrooms (mince after measuring)
    1/4 cup minced garlic
    15oz can Red Kidney Beans
    15oz can Diced Tomatoes
    1 1/2 cup uncooked brown rice
    4 cups Chicken stock
    2 teaspoons thyme
    1 tablespoon chili powder
    1 teaspoon ground red chili powder
    salt/pepper to taste


Saute onions in olive oil till translucent, add everything to pot, cook via rice directions.

Add extra water as needed.

Makes 6 1 1/2 cup servings

I added finely minced mushrooms to add another vegetable, and some more flavor.
