I've been making homemade pesto for years. Previously, I had used full fat yogurt, walnuts or pine nuts, and parmesean. Then, it struck me that nonfat cottage cheese might work perfectly in this recipe. It does! Enjoy this healthier, lighter version of creamy pesto on pasta, salads, or as a veggie dip. Ingredients

    1 cup nonfat cottage cheese
    .25 cup olive oil
    bunch fresh basil
    3 garlic cloves (more or less to taste)
    salt/pepper

Directions

Put ingredients into food processor and pulse until it becomes a pesto-like texture.

Makes 20 tablespoon-sized servings per batch.
