Delicious lasagna stuffed with vegetables. Delicious lasagna stuffed with vegetables.
Number of Servings: 5


    - 6 lasagna noodles
    - (optional) ground turkey
    - 1 zuchini, sliced thin
    - 1 red bell pepper, chopped
    - 5 small green onions, chopped
    - 1 cup mushrooms, sliced
    - 1 cup of spinach
    - 1.5 cups shredded mozza cheese
    - 1.5 cups tomato sauce or marinara
    - cinnamon, oregano, garlic salt, to taste


- If required, boil the noodles to soften.
- if meat is desired, cook until brown
- saute pepper, onion, zuchine, mushrooms with a bit of oil or butter
- layer bottom of lasagna dish (glass) with a bit of marinara; line with 3 noodles.
- cover with more sauce, and spinache; cover spinache with a layer of marinara then a layer of cheese
- add cooked veggies (and optional meat) to remaining sauce; mix in with a couple dashes of cinnamon, oregano, and garlic salt (seasoning to taste)
- layer over spinach/cheese; top with remaining 3 noodles; cover with cheese
- cover with tin foil, bake 40 minutes @ 425 F
