Ingredients

    2 TBS. extra virgin olive oil
    1 1/2 tsp. rosemary, dried
    1/4 tsp. salt
    1/2 tsp. black pepper
    1/2 tsp. red pepper
    2 large chicken breasts, cut in half
    6 cups fresh tomatoes, chopped
    1- 15 oz. can kidney beans, rinsed & drained
    1/2 cup chick peas
    1 cup frozen peas
    1/4 cup black olives, chopped

Directions

Makes 4 servings.

Heat oil in large pan over medium high.
Combine the spices; sprinkle over one side of chicken.
Place chicken in pan with spices down to form a crust, about 3 minutes.
Lower heat, turn chicken. Add the tomatoes, beans, and peas. Cover and simmer until chicken is done.
Right before serving, fold in olives, cover and let sit for a few minutes. Enjoy.

    Incredible!
    I was very surprised that I really enjoyed this! The only reason I tried it was that I had leftover fresh rosemary, tomatoes, and chicken and when I put that in the search this is the recipe that came up. I didn't think I was going to like it but I actually LOVED it! Thanks for sharing! - 3/26/11
