Ingredients

    1 lb boneless, skinless chicken breast
    1 red bell pepper, sliced
    2 c. summer squash, sliced
    8 oz. chopped fresh basil
    3 cloves garlic, minced or pressed
    3 Tbsp. olive oil
    salt and pepper to taste

Directions

1. Prepare chicken and vegetables, set aside.
2. Heat oil in large skillet on high heat, and sprinkle salt and pepper on chicken.
3. Cook chicken on one side.
4. Add vegetables and stir.
5. When food is nearly cooked, push it to one side and add the garlic.
6. After about 30 seconds, stir food together and add basil.
7. Cook another 30-60 seconds and serve.

*Note: pesto can be substituted for garlic and basil.
